Happy Thanksgiving fellow U.S. dwellers – and I don’t say citizens because my dad, who only became a citizen in 2020 in order to vote in the great state of Arizona, has long cited Thanksgiving as his favorite Holiday. Despite its dubious origins, he has always said that Thanksgiving is Americans at their best – giving, welcoming, focused on bringing their communities together and enjoying one another’s company. Growing up, our Thanksgiving celebrations were always a mix of family, chosen family and ex-pat friends – and this predates my parents hosting, which they have done for most of my lifetime. Including now. Today, it’s still a mix, albeit smaller, across the country and with new people.

A Thanksgiving Classic
My family Thanksgiving has always featured traditional Thanksgiving ingredients prepared in non-traditional ways. Now I realize that the fact that this particular recipe replaces – please brace yourselves, as it is quite shocking – mashed potatoes, is blasphemous to some. Okay most. But there are mashed potatoes in this classic French peasant dish and if you want to go through the trouble of making them yourself, you can. I have. Though honestly, instant mash potatoes work just great for the filling. You can also make your own pastry if you feel so inclined, but the flavor stands up to a decent grocery store crust. Oh! And I also love to make mini, single serving size versions in a muffin tin instead if a pie plate.
Ingredients
1 10-inch unbaked pastry shell
1 pound cottage cheese (blended in the food processor or put through a food mill to make it smooth)
2 cups mashed potatoes
½ cup sour cream
2 eggs
2 teaspoons salt
1/8 teaspoon cayenne
½ cup scallions, sliced
3 tablespoons grated Parmesan cheese
Directions
Beat the mashed potatoes into the cottage cheese.
Beat in sour cream, eggs, salt and cayenne
Stir in scallions
Spoon into pastry shell
Sprinkle with grated cheese.
Bake at 425 for 50 minutes until golden brown

Nice Pet of the Week: Coco
Exceptionally good on her 6.5 hour car trip to Thanksgiving Vacation. Didn’t pull so hard on her leash when she tried to chase a cat that she knocked mom over. Was only very bad when her human friend encouraged her to jump up on the furniture (she’s not allowed). Successfully ignored at least five other dogs.
Medium Pet of the Week: Light
More screaming than last week. Behavior otherwise the same. Failed to step up his game, but still a pretty good boy.
Naughty Pet of the Week: L
Threw his entire body into the office door in an attempt to open it and force a human to feed him breakfast. Cried and scratched at the door all night when mom and dad had to get up and do a long drive the next day. Attempted to play with all humans as if they were cats (teeth were involved).
